Anecdotally, one of the nice things about an iPad (or a clipboard) as compared to a computer is the way that the smaller device allows for better human interaction. There's something about a person locked into a computer screen typing that isolates in the way that a clipboard doesn't. To make an iPad (or other tablet) successful, it's important to make sure that the usability side is considered - think picklists and quick taps. Once you bring up the keyboard for an extended typing session, game over.
